On the Menu @Mario Batali's Eataly -- Hearty Vegan Soup

The perfect accompaniment for today's cooler and cloudy Fall weather.  I pulled this recipe, Mixed Vegetable and Farro Soup, from the October 2010 issue of Food & Wine magazine not only for its delicious ingredients but also for its featured content -- highlighting dishes offered at  Eataly, a new foodie mecca of sorts in NYC.  Mario Batali and partners, including Lidia Bastianich and Joe Bastianich, have reconfigured a 54,000 square foot corner building and created a space that houses part restaurants, part grocery, & part wine store, bringing the flavors and tastes of Italy to its patrons.  The Mixed Vegetable and Farro Soup recipe is one that is served at Eataly's "Vegetable Counter", a quick cafe counter style that features vegan items - how refreshing!
