Soup

Temperatures have dropped across the country, with the South being no exception to enduring the chilly & frosty weather....   I figured a pot of Soup (above) was just what we needed to have bubbling away on our stove to enjoy while the cold set in.

As mentioned in previous posts, my cooking tends to be by eye & taste....  And incorporating ingredients that I have on hand in the pantry. Details below....


Chicken & White Bean Veggie Soup

-heat in a large pot some olive oil....   and add chopped onions - I used both shallots & yellow onion
-while the onions are wilting down, chop your veggies - the heartiest ones go in  first (they'll need the longer cooking time to soften)....  Carrots, Celery, Zucchini....  stir all together + add salt & pepper and any other seasoning you like to taste
-cover with water and bring to a boil
-once boiling, reduce to a simmer....   add your beans....  stir all ingredients together....  check for seasoning
-add shredded chicken (or leave it out for a vegetarian soup)....  I roasted a split chicken breast the night before....  stir together & let simmer for all the flavors to marry together
-add spinach leaves....  which I always add last, because they wilt down so easily in the hot soup ....  Stir again, and taste for any additional salt, pepper, etc....

*I serve this soup right out of the pot & top with a drizzle of olive oil or cheese - shredded parmesan, cheddar, goat cheese....  Whatever you like....  Enjoy!
